Carrot Cake Muffins (SF, GF, HG, Low Carb)

This recipe kinda came about on a day where I just didn’t have enough almond flour and wanted my muffins to go further 🙂 Taste is very similar to corn bread when you skip the cinnamon and sweetener. This is Hypoglycemia Diet Liberal because of all the almonds and carrots. There are many ways to make these, they are a great snack and a great dessert and a great breakfast!! Can use zucchini instead of the carrots, can make as cake or muffins. Recipe for cream cheese icing at bottom.

Stir together:

  • 3/4 cup Almond Meal
  • 1/4 cup Flax meal (Optional, if not using flax meal, use full cup almond Meal)
  • 2 tsp Baking powder
  • 4 tsp Cinnamon
  • 2 tsp Xylitol
  • 1 Package Splenda (or to taste)

Using mixer, mix in:

  • 4 eggs
  • 4 tsp butter
  • 1 tsp Vanilla
  • 2 cups grated or finely chopped carrots (optional)(I used my kitchen aid to chop these up small, can use pre-cooked or raw, can also use Zucchini instead, grated and moisture squeezed out)

Pour into silicone muffin cups or muffin tin with papers sprayed with oil

Or pour into 9×6 buttered pan

Bake 350 27 mins or until inserted toothpick comes out clean


Cream Cheese Icing:

1/2 package cream cheese

1 Tbsp butter

1/8 cup granulated Splenda or other sweetener

Mix till double in size.


Tip: I whipped up a batch of my Cream Cheese Muffins (Click for recipe) and poured the batter on top of the carrot cake batter, came out yummy, but didn’t really even notice the cheese cake on top, maybe use more sweetener than the recipe calls for if you want to try this 🙂

Tip: cut sweetener in half if using for a breakfast muffin instead of dessert.

Tip: serve with Homemade Whip Cream instead of cream cheese Icing for a lighter feel.

Tip: Sprinkle some carob chips on top if you like, make sure they are sugar free! I didn’t really like them, not sweet enough. I won’t bother doing that again!
