We LOVE these cookies, and the thing I find so funny is that my hubby calls them biscuits! lol 😀 he smears butter on them and is happy as a clam, if clams are happy about a grain of sand rubbing in there to cause that pearl 😛 I digress…
These are easy peasy and your company will be SHOCKED they are sugar free and gluten free!!
Here’s the fabulous recipe, check it out:
Preheat oven to 350 because it only takes a couple minutes to whip these babies up! 🙂
In medium size bowl, whisk together:
1/4 tsp sea salt
2 Tbsp Xylitol
1/3 cup granulated Splenda
3 tsp Almond flavor (I use Watkins artificial extracts, very yummy :))
1 tsp Baking Soda
once above is well combined,
stir in 1 Cup softened almond butter (usually found beside the peanut butter in the grocery store, make sure the oil is stirred in well before using. I usually scoop the whole works into a bowl and stir it in with a spoon before using.)
scoop onto parchment lined cookie sheet and bake for 14 minutes 🙂 Makes approx 15 cookies
Tip: I tried punching the globs down with a fork so they would look prettier, but they just stick like crazy to the fork, so no luck, let me know if you figure out something better that works!!
Tip: These taste best when they are cool, but try both ways, we love them hot or cold!
Tip: want a sweeter cookie? Use more Splenda, 1 Tbsp might do the trick 🙂
Tip: try making them with a cinnamon paste on top, I LOVED this! here’s how: stir together: 2 Tbsp melted butter, 1 Tbsp cinnamon, 1 Tbsp Xylitol, smear a bit on top of each cookie before baking 🙂
