Check out the crunchy stuff on the top and the bottom of my Sugar Free Strawberry Parfait (Hypoglycemia Diet Strict and lib)
This is SO easy, I always keep a container of it on hand so when I’m in a pinch, it’s SUPER easy to throw a desert together 🙂
1 Tbsp (ish) Melted butter
1 cup Almonds
1/2 tsp Almond flavor (I use Watkins Artificial extracts)
1 Tbsp Xylitol (you can use alternative sweeteners, but I don’t know how crunchy they will be!)
I have a coffee grinder that I use for everything BUT grinding coffee… I don’t honestly know how I got along with out it!! In your coffee grinder, pulse about a cup of unsalted almonds, they can be roasted or raw, both are delicious. Just enough to break them up a bit, you don’t want to turn your almonds to powder.
Stir in flavor and Xylitol (click for more info on what is Xylitol)
Melt butter and stir in just enough to make everything stick together, you DON’T want it runny!
Break up into small chunks, put on plate and freeze for at least 15 mins.
Store in Freezer!
Tip: You COULD try almond meal if you have that and no whole almonds, but if I remember correctly, almond meal is pretty powdery, so you just might not have it be as crumbly!
Tip: About the Xylitol, you can also pulse it with your almonds, so there is less CRUNCH in your crumble, I like it both ways 🙂
