Easy almond Shortbread recipe (GF, SF, HG, Low Carb)

NUM NUM! I had some left over from yesterday if you can imagine. (from pure will power!) and scarfed them down for breakfast first thing this morning ๐Ÿ˜› I think I must have been dreaming about them or something because there was NO stopping me! haha ๐Ÿ˜€

These are definitely my favorite almond meal cookies yet! and they are SOOO easy!

2 cups Almond meal/almond four (VERY finely ground is best)

6 Tbsp softened butter

pinch sea salt

2 egg whites

1 1/2 Tbsp Xylitol

1 package Splenda

1/2 tsp artificial almond extract

Mix. Scoop onto parchment lined cookie sheet.

Bake in pre-heated oven at 350 for 10 mins. Cool on pan for 10 mins.

Indulge and enjoy ๐Ÿ™‚ FYI, these are fairly filling just to warn you, so don’t eat them too fast! lol ๐Ÿ˜€

Tip: if you can make it work, try flattening them down with a fork, I couldn’t get the batter off the fork once I flattened them ๐Ÿ˜€ Maybe try dipping your fork in some almond flour first?

    Have you ever substituted powdered or liquid stevia? If so, what amounts?

      hey Deb! ๐Ÿ™‚ No I haven’t used Stevia, I tried it and really hated it lol ๐Ÿ˜€ I know I have seen some calculators on the net for Stevia conversions from other sweeteners. my sweetener amounts are equal to the amount of sugar I would use. Hope that helps! ๐Ÿ™‚

    Aren’t almonds high in salicylates? I tried baking muffins with almond meal, bananas, walnuts and raisins. Not good, bad reaction.

      Hi L! ๐Ÿ™‚ yes, almonds are high in salicylates! My recipes are for the HG diet, which are Gluten Free, Sugar Free, Hypoglycemic ๐Ÿ™‚ hope that helps to clear this up!
