Baked Carrot Oatmeal (SF, GF, LC, HG lib)

Baked Carrot OatmealI now have kids in my home and need healthy snacks! Have you seen the amount of sugar in EVERYTHING?! Good heavens! My boys weep at night when they have too much sugar, which admittedly, doesn’t take much. They take after me that way! lol! 😀

This is a work in progress and I’ll probably use mashed banana next time to try to naturally sweeten it 🙂 The carrots are my daring effort to get some veggies in them 😀

But everyone loves it as is, so YAY! 😀

Makes a thin layer in a small square dish. Could make it in a loaf pan. Will definitely double it for next time! SO easy too! Didn’t even get out my mixer, just stirred it all together 🙂

Stir together:

1 cup slow cook oats
2 tsp baking powder
1 tsp cinnamon
2 tsp Xylitol
Pinch of salt
1 Tbsp butter chopped in

Then stir in:

2 eggs
1 tsp honey (use other sugar free sweetener like Splenda for HG 🙂
1 tsp vanilla
1 cup grated/ finely chopped carrots using my fav chopper 🙂
½ cup water (may use milk next time for richer flavor 🙂 )

Bakes in buttered pan at 350 30 mins!
