Beef Sauerkraut soup (GF, SF, LC, HG)

Beef Sauerkraut Soup

This recipe came from one of those tired days where you just need something easy and NEW already! πŸ˜€

Takes an hour from start to finish. This recipe is a double batch, so you can freeze some for another quick meal πŸ™‚

Ingredients:

In separate frying pan:

  • 4 lbs ground beef. Fried and browned. Mine has enough fat without needing to add more to the pan, but if yours is lean, you will need some oil in there!

In large pot:

  • 1 Tbsp avocado oil (high smoke point and healthy)
  • 2 lg onions, chopped and fried in oil till just tender

Then add to pot and bring to boil then simmer:

  • 2 Tbsp minced or crushed garlic
  • 2 cups thinly sliced carrots
  • 2 cups homemade chicken stock
  • 1 lg can diced tomatoes (796ml)
  • 1 jar Sauerkraut with juices
  • 3-4 cups water
  • 1 package Splenda
  • 1 Tbsp Xylitol
  • 2 Tbsp Worcestershire sauce
  • 1 tsp Kikkoman soy sauce
  • 2 tsp sage
  • 1/4 cup Parsley
  • 8 bay leaves
  • 1 Tbsp sea salt (if your stock is salted, you will need half this amount)
  • 1 tsp Fresh ground pepper or Β to taste

Simmer for 30 mins, then add ground beef, deglaze pan with a little hot water or hot pan and scrape into pot. Simmer another 10 mins.

Serve with Sour cream and enjoy! πŸ™‚
