Breakfast casserole (HG Strict, GF, SF, LC)This is such a YUMMY breakfast that I’ve made it for lunch a few times too! It’s so filling we just love it! My mom made it for us at Christmas, knowing my hubby and I were both on this diet (such a sweetie I know!) πŸ˜€ I called it Christmas casserole for the longest time! haha! πŸ˜€

OK, you have to plan a little ahead for this one because it has to be in the oven for about 40 mins but I am telling you, SO WORTH IT!! πŸ˜€

Here’s what you do:

Start by frying 1 lb bacon, once almost done, drain 1/2 fat,

into 9×13 non-greased pan (you’ll see why in a sec…:D)

1 cup (ish) grated cheese on bottom

18 eggs, crack and gently placed on top. eggs gently poked with sharp knife. Sprinkle tiny bit of salt on top.

Bacon on next.

breakfast casserole (HG strict, GF, SF, LC)2 or 3 chopped peppers. on top (can do a chopped onion or 2 in there too, if not on Strict weight loss diet :))

1 or 2 cups grated cheese sprinkled on top

drizzle 1/2 cup heavy cream last

Bake at 370 for 40 mins.

YUMO!! πŸ˜€

Serve with some fruit and voila! Totally awesome breakfast! I cut mine into breakfast sized pieces and freeze for a week of breakfasts πŸ™‚

    Do you have a recomendation for a multivitamin? Also coconut oil uses in personal products or over the counter.

      Hi Cindy! Are you on the protocol? There’s a couple options here for multis: http://christinescozycorner.ca/vitamins-and-salicylates/

      And if you are on the protocol, coconut oil has salicylates and will block your guaifenesin from working to get you well if you use it on your skin, so use it in your food only and you’ll continue clearing away your phosphates πŸ™‚

        I’m on the protocol since Feb. I’m seeing a dr here who works in conjunction w/dr.st.amand. He told me coconut oil was safe to use topically. I shall have to inquire further w/him. I feel very fatigued most days & no energy. I’ve gone on a gluten,dairy, caffeine, reduced sugar & processed food free diet. It’s helped my stomach but nothing for the pain even tho I’m on the protocol. I’m very overwhelmed w/all the no no’s, do’s & don’ts. I still feel like I’m not doing enough for me. I wish the were a support group here. I live in Mesa, AZ.

          Please tell me the name of your doctor who told you coconut oil topically was ok!! I will need to keep that on record to let others know that this doctor is not to be trusted for protocol advice! πŸ™ BUMMER! I LOVE having doctors help their fibro patients! Maybe you could suggest he read Dr St Amand’s book again? And definitelyhave him read through the paper Dr St Amand wrote for Doctors!

          Yep, you are just getting going on the protocol, so hang in there. Remember this is a marathon not a sprint! Can you give me some protocol details so I can help you better? Like, did you read Dr St Amand’s book? What type of guaifenesin are you taking and how much?

          Yes, there is a HUGE learning curve at the beginning, it’s alot to take in and adjust to. But hang in there! It DOES get easier! Now, these things are all just part of life for me, like brushing my teeth and taking a shower, it’s just something you do because you need to! <3
