This is such a YUMMY breakfast that I’ve made it for lunch a few times too! It’s so filling we just love it! My mom made it for us at Christmas, knowing my hubby and I were both on this diet (such a sweetie I know!) 😀 I called it Christmas casserole for the longest time! haha! 😀
OK, you have to plan a little ahead for this one because it has to be in the oven for about 40 mins but I am telling you, SO WORTH IT!! 😀
Here’s what you do:
Start by frying 1 lb bacon, once almost done, drain 1/2 fat,
into 9×13 non-greased pan (you’ll see why in a sec…:D)
1 cup (ish) grated cheese on bottom
18 eggs, crack and gently placed on top. eggs gently poked with sharp knife. Sprinkle tiny bit of salt on top.
Bacon on next.
2 or 3 chopped peppers. on top (can do a chopped onion or 2 in there too, if not on Strict weight loss diet :))
1 or 2 cups grated cheese sprinkled on top
drizzle 1/2 cup heavy cream last
Bake at 370 for 40 mins.
Serve with some fruit and voila! Totally awesome breakfast! I cut mine into breakfast sized pieces and freeze for a week of breakfasts 🙂
