Cabbage Roll Casserole (HG lib, GF, SF, LC)

As usual, we scarffed this down before I realized I should be taking a picture of it to show you how pretty it is haha! 🙂 Oh my is it ever YUMMY!

My hubby even loved it YAY! 🙂 and he’s not usually a fan of cabbage type meals! This is easy , but takes a while in the oven , so plan ahead.

Fry together:

1 Tbsp butter (omit if using bacon)

1 lb ground beef (cooked)

bacon (optional)

1 tsp each salt and fresh ground pepper

1 chopped onion

 

 

When above is cooked, stir into large casserole dish:

1/2 cauliflower, Riced

1 lb bag shredded coleslaw cabbage (choose the one with mostly cabbage, or go through all the work of cutting up your own cabbage :))

1 cup raw sauerkraut, drained.

1/2 tomato sauce (recipe below or use pre-made store bought sugar free tom sauce)

 

Once combined, pour rest of sauce on top, put lid on.

Cook in preheated oven at 370 for 1 hour. Take lid off, cook another 10mins.

 

Tomato Sauce, put in blender:

2 small cans tomato paste (6oz)

1 1/2 cans paste filled with watergreen chilies

1 small can Green chilles- chopped or whole (4oz)

1 tsp onion powder

1 tsp garlic powder

1 tsp seasalt

 

Serve and enjoy! We ate just this, but you could also serve with some more steamed veggies and/or with some HG safe bread.
