Oh FINALLY I got a picture of this yummy little snack!! I usually don’t have pictures of these because we eat them too fast! LOL πŸ˜€ I was gonna wait till I had pictures to share this simple recipe with you, but you could be waiting a very long time and you NEED to know how to do these!!

You are gonna LOVE this little snack, it’s so easy! You don’t even have to grate the cheese!!

So, cut some slices of cheese into squares, maybe 1 inch ish.

Place on baking paper (parchment paper) lined cookie sheet.

Leave plain or sprinkle some ranch seasoning or basil or parmesan cheese on them (do NOT add salt, they are plently salty enough!)

Bake in 350 oven for 12 -13 minutes till they are golden brown, let cool for 1-2 minutes and then devour! YUMM!

The ones in the picture are mozza, and I baked another 3 mins, but watch carefully so they don’t burn. The softer your cheese, the longer they bake because there is more water to bake out of them. The only thing to NOT use is the LIGHT cheeses. They don’t work for some reason! Weird!

If your cheese comes out burnt or still chewy, adjust the temp or change the size of your cheese slices. I found the smallest slices were the crispiest πŸ™‚

Serve with salsa (for liberal HG Diet) and sour cream! YUMM!

btw- you will get some oil onΒ  your pan, so put the crisps on some paper towel like you do with bacon before serving

    These look delicious! I love the cheese that melts out of grilled cheese sandwiches and gets crispy on the pan…what I great idea to make JUST that! LOL I’ll have to try these soon πŸ™‚

If you can resist eating them first, grab a platter spread them out in one layer, then layer on taco meat (ground beef, pork, or turkey) drained well and seasoned with taco seasoning, diced garlic, diced onion (very small) cooked till most of the moisture is out but not burnt or too dry. Then pour a layer of your homemade salsa, followed by a layer of xtra-sharp cheddar cheese Next add another layer of the cheese crisps. If you have enough or are making it for a larger group, then add another layer of everything, then top it off with a layer of homemade guacamole, and sour cream. I used to make this with the corn tortilla chips but using the cheese crisps will cut out a lot of carbs. I will submit the recipe for my homemade guacamole tomorrow after I have had some sleep. Insomnia strikes again. I hope to be starting my Guai treatment soon. I just finished the book and am going to bring it to my doctor to start on. I appreciate all you do. I have been working on a SF low carb homemade ice cream but I am running into some challenges. Have you tried this? If so, does your ice cream freeze to a solid block of ice after it sets up? I think I know why. If you have tried ice cream, let me know. Thanks,

      Hi Kim! Thanks for your info! I LOVE that idea about the nachos! YUMO!!!! And I LOVE guacamole too! glad to hear you finished the book, how did your doctor take it? Is he actually going to read it?! that would be so amazing, we need more doctors to get on board with this.

      I have made the sf low carb ice cream and it always freezes hard. We try to eat it up freshly made! haha! not the best way to lose weight that way LOL πŸ˜€ I have heard that a little bit of whey protein powder can help with that. If you give it a try let me know how it goes! πŸ™‚ It’s too cold here now to want ice cream, totally should have tried it last week πŸ˜›
