Cheesy Souffle

So, sometimes I end up with 6-12 dozen eggs in my fridge, between buying them from a grocery store, family dropping extras off and buying extras from another friend who ends up with 20+ dozen in her fridge sometimes! I HAD to come up with something I like that dosn’t necessary make me feel like I am just eating more eggs all the time. So, here’s one of my new favs and the best part? SOOOO easy! ๐Ÿ˜€

Preheat oven to 350

In medium size bowl mix on low for 1-2 minutes:

7 regular sized eggs

1/2 cup cream

pinch of nutmeg

1/2 tsp sea salt

2 garlic cloves, crushed (optional)


Stir in:

2 cups pre-cooked, coarsely chopped veggies. I’ve used broccoli, cauliflower, carrots, spinach all are good or a mix of all are good!

1 1/2- 2 cups grated cheese- any kind


Liberally butter a medium-small casserole dish (about the same size as a pie pan but deeper.)

Scoop all into casserole dish, bake in preheated oven 50 mins uncoverd, till a nice golden brown.

Tip: please note that all ovens seem to cook a little different, mine is a gas oven, so adjust your time accordingly!

Tip: do NOT used already over-cooked veggies, they get a little too mushy in here! I had some carrots that I steamed a little too long with our supper the night before, they got pretty

yucky after being cooked AGAIN for 40 minutes ๐Ÿ˜›

  1. Thank you so much for this recipe. I follow a gluten-free diet because it helps me manage the numbness I have in my hands from a pinched nerve in my neck. This recipe looks really awesome. I will be serving it for dinner at some point this week. I’m going to try halving it because there are only two of us. Thanks again! Marie

      oh my pleasure! I’m just glad someone is getting some use of it! ๐Ÿ˜€

      You could put it in little ramekins too, cut the baking time down by 5- 10 mins would do it ๐Ÿ™‚ This dosn’t actually make that much believe it or not! My hubby and I ate it all in one sitting, but it’s all we had, I’m not very creative with adding stuff to the meal ๐Ÿ˜›

    I enjoyed making crustless quiches when I was pregnant and having problems controlling my blood sugar. It was so easy to add odds and ends of vegetables as well to keep from wasting them. ๐Ÿ™‚

    PS – I am making this recipe as part of a 8-course LCHF degustation menu for 30 friends in 3 days time! I am sure they will also be suitably impressed with it.
