I have a confession to make! Yes, this was my breakfast this morning, along with some left over souffle from yesterday’s lunch 😛 Souffle recipe coming up! Ok, so who DOSN’T like chocolate? I LOVE chocolate and it’s definitely the hardest part of the Hypoglycemia Diet! I have tried the tiniest amounts of chocolate, just to see if I can take it, and I’m here to tell you I CAN’T take it 🙁 You do not want to be around me when I’ve had chocolate, makes me kinda crazy and moody of all things, not to mention the fact that I don’t get much sleep!
SO, in my desperate attempt to not give up something I love, I started stirring together all kinds of things till I found something darn close! Here’s my latest AWESOME recipe!! 😀
1 Tbsp Carob Chips (sugar free ones)
1 Tbsp milk/cream
Microwave 30 -40 seconds. Stir well, it should go a nice smooth consistency as you stir it.
Add 2 tsp Chocolate Watkins Artificial Extract
1 1/2 tsp Xylitol (or to taste)
Microwave another 30 seconds, stir again, and use! YUMMY! I had a tall glass of cold chocolate milk with this, and OH MY! 😀
Tip: I got my Carob chips from the Health Food store, and you may need to verify that they are indeed sugar free, esp if in a bulk bin or something.
Tip: This is a dark-chocolate flavor, if you are a milk chocolate fan, try adding more Xylitol and using more milk than I did 🙂
Tip: can be used for a Hot Chocolate or Chocolate Milk but NEEDS some cream or some sort of milky substance, it’s a strong chocolate flavored sauce!
