These are a PERFECT breakfast food, super yummy AND packed with protein!

Cream cheese muffins

2 8oz. pks. philadelphia cream cheese
3/4 cup sweetener (I use a mixture of Splenda and Xylitol)
4 eggs
1/2- 1 tsp. vanilla

Soften cream cheese about 40 seconds in microwave.

Add other ingredients.

Beat with mixer till smooth.

Pour into 12 muffin pans lined with the papers, or use silicone muffin cups- which is now my favorite way of baking anything muffin! ๐Ÿ™‚

Bake at 350 for 30 min.

This is SUPER easy and so so yummy! Donโ€™t be surprised when they flatten out though, they are still delicious!

You can make them a desert by adding on some berries and whipping creamโ€ฆ YUM!

    Could you clarify the quantities of sweeteners that you use for this recipe? You mention you use a combination of Splenda and xylitol, but how much of each? I am new to this way of life and so don’t have any “common sense” in regard to sweeteners. My 20 year old daughter has been struggling with depression and anxiety, sleeplessness, you name it, and we are hoping that the hypoglycemic diet will be of help to her. But, boy, is it hard to start! Thank you so much for all of the information on your site.

      I use about 1/2 and 1/2 of the two sweeteners, but it really depends on my mood lol ๐Ÿ™‚ Sometimes I have heard more about Splenda being unhealthy, so will use more of the Xylitol, and then other times I am worried about the cost of Xylitol so will use more Splenda ๐Ÿ™‚ It’s very forgiving ๐Ÿ™‚

      oh yes! The HG diet is really hard to start. Once you are there and eating this way though, it gets easier and easier. The important thing is to have lots of healthy snack options so you never get hungry and crave sweets and carbs! You can do it and it’s SOOOO worth it! I used to really struggle with those same symptoms and the diet has totally made a difference ๐Ÿ™‚
