Perfect for leftover ham for the holidays! LOVE this soup, it resembles my moms pea soup that she used to make with the leftover ham bone broth 🙂 Only not so… ahem… gassy!! 😀
This soup will remind you of my cream of cauliflower soup that I made and shared with you not that long ago, just a few changes 🙂
This is my hubby’s current favorite soup, could just be because it’s new though 😀
2 heads of cauliflower, coarsly chopped and steamed till soft- about 20 mins.
1 Tbsp butter
1 chopped onion, fried in butter till tender.
Put above 3 in blender with just enough water to almost cover. Blend till smooth and very thick. You may have to do 2 blender-fulls, I usually make enough to need to!
In large pot bring to boil 1 cup chicken stock (homemade preferable)
2 cups grated/finely chopped carrots
Dice into cubes your left over ham, approx. 2 cups.
1-3 tsp seasalt to taste.
½ tsp fresh cracked pepper
1 Tbsp parsley
Put all in large pot and simmer for 30 mins.
Serve with a little milk to cool it down 🙂 YUM!
Tip: If you remembered to keep your ham bone, simmer for about 1 hr in just enough water to cover the bone. This is the water that you will use to blend your cauliflower. Much yummier and healthier! Reduce salt in recipe.
