Grilled Veggies is a new favorite dish of mine, it is incredibly easy and so very yummy!!


Preheat oven to 415

Layer a cookie sheet with parchment paper, spray with cooking spray (I use a mixture of oils in my own spray container)

Chop into large chunks: peppers, onion, zucchini, mushrooms.

Sprinkle all with sea salt and dried Thyme leaves.

Zucchini is great with some mozza cheese on top, mushrooms need a little spritz of oil on them.

Pop into oven for 22 minutes or until edges go brown.

Tip: for Hypoglycemia Diet Strict, don’t use onions or carrots, for Lib, if you want to use Carrots, steam them for 10 minutes first, to soften them up, and then they are REALLY yummy

That’s it! awesome, hey? You are gonna love this new little gem of some yummy food! I have been making grilled veggies ALOT lately, I think my hubby is actually getting sick of it! lol 😀

So, I’ve been reading on blogs lately how folks are getting tired of the ‘perfect life’ that people portray on the web. So, let me dispell with any idyllic thoughts of my far-from-perfect life!

My hubby works very hard to make enough money so that I can do the cooking- which I LOVE. He told me just yesterday how much he loves it that I am home, cooking amazing meals for him! awwww right?! Well, I seriously couldn’t do it, and sure wouldn’t have the time to cook everything from scratch if I worked full time or had a house full of little ones.

And that’s where THIS recipe comes from. I got the flu on top of my fibromyalgia, and could barely get off the couch for anything, let alone standing by the stove to cook my usual meals. This recipe is so perfect for a very imperfect me! So thankful to the Lord for His gentle loving care in sending to me a man who loves the traditional roles in marriage, because I sure couldn’t do it any other way, nor would I want to!

Anyhow, that’s my little 2 cents on the topic, not that any of you really did think I have the perfect little life or anything… RIGHT?!

    That looks so yummy! I’ve roasted veggies before but never with cheese. I’ve definitely got to try that!

      glad to hear it! The cheese makes the zucchini so so YUMMY! 🙂 what other tips can you share when you grill your veggies? I’m always looking for some new ideas! 🙂 🙂

  2. This definitely falls under the “so simple, yet genius” category. Grilling veggies isn’t something I always think about doing, but you’re right… they’re so simple!       thanks for coming by!! And yes, I hear ya! Sometimes the easiest ones are the yummiest too! 😉 Steaming veggies is another favorite, smeared with butter and salt and we are happy campers!
