Hot and Sour Stoup

Like sweet and sour, but can’t figure out how to thicken it Low carb without flour or slimy thickeners? This is something I finally figured out that you’re gonna LOVE! Hint- thickened with a pureed vegetable! 😀

And instead of putting it ON my steamed veggies, I decided to try putting it right in there and making a stoup out of it! So, it’s like stew, but also soup… you decide what to call it! 🙂

Brown in large hot frying pan with 2 Tbsp butter:
2 1/2 Lb ground beef sprinkled with:
2 tsp Seasalt
2 tsp Onion powder
2 tsp garlic powder

Once above is browned, add in and saute till just done:
3 chopped red/yellow/orange peppers
2 chopped onions

In separate large pot bring to boil and simmer:
2 lg can (1lb/ 2.84L ea) Diced tomatoes
3/4 cup vinegar
6 Tbsp Xylitol (or other equivalent sweetener)
7 packages Splenda (or other equivalent sweetener)
2 tsp onion powder
2 tsp garlic powder
1/2 Tbsp seasalt
1 tsp chili powder
1/2 tsp cinnamon
1/4- 1 tsp cayenne pepper, to taste.

Stir all together in large pot and add in:
½ head cauliflower, steamed and blended till smooth with 1 cup water.

Serve immediately!

Feel free to add more liquid if you prefer less strong flavor, and more soupy-ness 🙂 I love the thickness of this soup that almost resembles a stew and totally reminds me of some awesome Hot and Sour soup I had in a really cool Chinese restaurant I went to some 20 years back 🙂 Good memories!
