What is Hypoglycemia/Carb intolerance? (in my own words)

We all know that the amounts of sugar we eat everyday, in everything, is costing us our health. But did you know that a high-carbohydrate diet can have the same effect? Rice, Pasta, Potatoes, breads all turn into sugar in your blood stream pretty quickly, and if you are Hypoglycemic like me, you will struggle with the highs and lows and fatigue that comes with the wrong diet.

All of my recipes are low-carb and sugar free for a reason!! I have Hypoglycemia and my husband has type 2 diabetes. Low carb and low Glycemic diets are known to lower inflammation, as someone with Fibromyalgia, I can tell you right now that this diet is WORTH it!!!

    I’m really interested in doing this!! Do you have an example of what a typical day of food would be like?

      Hi Megan! hmmm… a typical day? when it;s hot out, I have a strawberry protein shake for breakfast at around 9am. Then I will have some left overs for lunch, or more often it’s a fried egg and some salad or other veggies, that’s usually between 1 and 2pm. Then I have a piece of fruit and some cheese around 4pm, and one of my main meals around 7pm. Around 9 or 10pm I will have a handfull of nuts or other HG safe dessert or snack in there. Does that help?

    So glad I found your blog. Just found out I’m HG and almost feel lost. Generally eat healthy but going to try and do better. It’s been a little hard with 4 boys in our house. Any quick “snack/to go” food ideas?

      Hi Rebecca! Snacks for you? Depends on if you are HG lib or HG Strict. I would start with the lib side, just till you get used to all the changes, they you can cut out some lib ones if you need to loose some weight. SO, peanut butter with celery or apple slices is a really satisfying one that I love. Celery before bed, apple in the afternoon or you can get HG symptoms at night. any nuts that you like are good snacks and i usually carry a bag of them everywhere I go so I can eat some when others are having their snacks and I don’t feel tempted PLUS hungry lol! At home, you can microwave some cheese slices for a minute or so, let them cool and they get crunchy. Dip in salsa and sour cream 🙂 Carrot sticks with ranch dip is a good one too 🙂 I have some ideas in my “snacks’ link that you can check out if you want to make something! Have fun!
