Some of the best things in life come when you least expect it! 😀 this recipe falls into that category! SO YUMMY!!!!

As usual, I have a ton of leftover chicken from baking 2 of them. Still not used to having only 2 of us to feed!

You getting bored of the same old recipes done over and over? Esp when you can’t have all the sweets and carbs? THIS has totally gotten rid of the doldrums 😀 Hypoglycemia Diet lib, Gluten Free, Sugar Free, Low Carb yumminess! 🙂

Ingredients:

  • 2 Tbsp butter
  • 2 white onions, chopped
  • 2 tsp chopped garlic
  • 1 Tbsp ground cumin
  • 1 Tbsp chili powder
  • ½ tsp cayenne pepper
  • 1 tsp seasalt
  • 1 can diced tomatoes
  • 1/2 can crushed tomatoes
  • 2 cups thinly diced/chopped carrots
  • 2 cups chopped cauliflower
  • 5 cups baked and diced chicken
  • 1 cup chicken stock (homemade preferable, if using store-bought do 2 cups and skip water)
  • 1 cup water

In large pot, fry butter and onions till tender. Takes about 5 mins. Add garlic, fry about 1 min.

Add rest of ingredients other than chicken. Bring to boil and simmer for 25 mins or until carrots are tender.

Remove from heat. Stir in pre-cooked chicken and 1 ½ cups cream (I used un-whipped whipping cream, any heavy cream would work)

Serve with grated cheese and dollop of sour cream. Can garnish with fresh cilantro, I never have that kind of thing on hand. Probably could use some green onions or chives for that 😀
