These are AMAZING! I never ever would have thought to put these ingredients together, but it WORKS! And they look and taste just like the real thing! YES!
Found this recipe in a comment on a website, and changed it up to suit us 🙂 You will NOT believe how super easy these are too!!

Into a Blender:
1 cup Cottage cheese
2 Tbsp ground Flax/ Chia
2 Tbsp butter
Blend till smooth
Heat your frying pans (with lids) to med, with butter coating the bottom.
Pour in enough batter to fill bottom of frying pan, and so it’s as thick as you want your pancakes.
Cooking time depends on how thick you poured your pancakes. I like mine crispy around the edges, so I cook with lid on for 5 mins one side, take lid off and cook another 3-4 mins other side 🙂 If you are making them thin like a crepe, it will need less cooking time 🙂 I do a few at a time, they keep well in the fridge.
The batter also keeps well in the fridge, if you are just wanting one a day 🙂
