Pork Chop Soup (HG lib, SF, GF, LC)Here’s one of those meals that I just threw together because I had no cream for my Creamy Porkchops that I love so much, and it’s -30 outside, so who wants to warm up the car to go to the grocery store in that cold weather for some CREAM?! LOL, not me! ha!

As usually happens when I throw food together for a meal, of course, we devoured this too fast to take a picture of the finished product, sorry folks! Here’s your browned porch chops before you stick em in the casserole dish 🙂 You are gonna love how easy AND yummy this is, not to mention totally healthy! 😀

4 Pork chops, Sprinkled with sea salt, onion powder, garlic powder and Rosemary on each side. browned with a little butter on high on each side. set aside.

Put in a large casserole dish:

1 cup of homemade soup stock, (mine was still frozen, no big deal!)

browned Porkchops,
1 large can plain diced tomatoes,
1 chopped up onion,
2 small- medium zucchini, sliced.
sprinkle another tsp salt on zucchini.
Swirl 1/4 cup water in your frying pan to get all the yummy browning juices and spices out of your pan, pour into casserole dish on top.

Put in oven at 400 for 15 mins. turn down to 275 for 60-90 mins. YUMMMMM! If your soup stock isn’t frozen, skip the 15 mins at 400 🙂

I had it like soup, and then a separate plate for the pork chops.

My hubby scooped out the veggies minus the soup part and had it on a plate. Just a hint: The soup stuff is SO YUMMY, you are gonna want a bowl!! 🙂

Can even sprinkle a little mozza cheese on top of your soup in your bowl if you like 🙂

    Mmmmm…more culinary awesomeness from Christine’s Cozy Corner! Since my kids are not fans of chunky soup, I tweaked it a bit…I used 4 cups of broth (instead of one) and added 1/2 cup of heavy cream, and then when the soup was done cooking, I removed the pork chops and pureed the remainder with an immersion blender. A bit of Mozzarella cheese on top, as you suggested, and voila! We have “pizza soup”, as my kids called it! We all loved it…thank you, Christine!
