Have you Noticed? I use ALOT Of eggs in my recipes. (Check out my Yummy Breakfast Shakes Recipes) And some of them are raw. This is frightening to alot of people, and I WAS not one of them! Until I had eaten just one too many raw eggs and now can’t stomach them 😛 So, I went out and spent the money on some pasteurized raw egg whites. Kinda pricey and hard to find, but worth it when you have SO many recipes using them! THEN I found this article on pasteurizing your own eggs, this is SO EASY! In hot water at 145 for 4 mins, and they come out perfect! No tummy upsets yet, with all the yummy breakfast shakes we’re eating!
Have YOU tried this? I have tried making egg powder stuff, that is NASTY! Just sat in my freezer for a few months till I tossed them 😛 THIS though, totally works!

“To pasteurize large eggs, place them in a saucepan filled with water and fitted with a digital thermometer. Turn on the heat and bring the water up to 140F.
Keep the water temperature at 140F for 3 minutes (and no more than 142F), reducing the heat on the burner if necessary. Remove eggs from hot water and rinse thoroughly with cold water.
Store in the refrigerator until needed or use right away.
Jumbo sized eggs need to 5 minutes in 140F water.”
My sister in law owns a bunch of chickens- all different kinds, she just loves them! Living in the country this is alot more possible for her than it is for me. One day we might move to the country, THEN I will consider getting some chickens too! We buy her some seed every year and she supplies us with the best eggs you will EVER have, free range and all!
