This is a new favorite dish both for how fast it is, and for how YUMMY! We’ve been missing rice. Have you? Well, this is the next best thing 🙂 So get out your Soya Sauce (sugar free kind, if you please :))
1 head cauliflower
1 Tbsp butter
Chop cauliflower so it fits in blender without being tight. If your head of cauli is large, it won’t all fit, just to warn ya! 🙂 (If you shove it in tight, it wont all blend and will puree before it’s done. blech!)
Fill with water till just covered.
Blend on low for just a few seconds- till all is JUST chopped. If you leave it too long in the blender, it will puree- you don’t want that! ew! I usually watch the blender and once the top chunks of cauliflower are moving to the bottom, I’m done!
Strain your cauliflower in a mesh strainer. I usually help squeeze out some of the water with my hands 🙂
While that is straining, pre-heat your frying pan with butter.
Put Cauliflower in frying pan with lid on high, for 3 minutes.
Stir in salt and parsley, leave on high for another 5 mins till it starts to brown on bottom.
Serve hot with butter, salt and soy sauce 🙂 I prefer the Kikkoman soy sauce, as it’s sugar free 🙂
