Tis the season for harvesting and canning and using up our beautiful garden produce! love it! I scarffed down a whole lot of this for supper last night, was SO good!

So, this recipe is really my own, I looked at tons of recipes and didn’t like any of them lol 😀 I like the apple and carrot for a little sweetness in this one, so you can skip the Splenda all together.

This is super easy- no peeling of the tomatoes or anything like that, just need a food processor/ chopper!

Makes a mild- med heat salsa, so adjust jalapenos accordingly.

Puree in food processor:

½ apple, peeled and cored

1 Jalapeno seeded

1-2 garlic cloves

Chop in food processor:

8 med size tomatoes

1 red, orange or yellow pepper

1 cup chopped onion

½- 1 cup grated carrot

1 small can green chillies

1 package Splenda (optional)

1 bunch Cilantro (just the tops)

1-2 tsp salt

2 tsp lime juice

1 can tomato paste

Pour all into pot, stir and heat till just hot, let cool, poor into freezable containers, freeze what you have left after you’ve devoured most of it! LOL 😀

I ate this with a plate of my homemade Cheese Crisps, YUM!

Serve hot or cold, both are great 🙂
