So, YES I am sick, and YES I am a wuss when I’m sick!! You would think, with being sick every day of the last 20 years, getting the flu wouldn’t make such a baby out of me, but alas! It DOES! It’s something of a miracle that I bothered to take a picture! hehe 😀
Yesterday I did eat some food, very little though. My stomach and head and whole body just hurt, along with a good fever, I just layed on my couch like an invalid. My plan is to do the same thing today, haha! Thankfully, the fever broke, so maybe I am getting better after all!
This soup is SO easy and YUMMY and so so soothing on a throat and tummy. You just need some Homemade Chicken Stock, but you could probably use the store bought stuff. I always try to go as natural as possible, and the nutrients and vitamins and protein in homemade stock is bar none the best out there. I always have some of my homemade stuff frozen in little 1/2 cup containers in the freezer.
This simple soup is something I just came up with today when thinking about having some liptons chicken noodle soup- and that I can’t have it for more reasons than one! First, it’s FULL of crap, not to mention the high carb noodles in there that will give me a sugar spike and make me feel worse. And second, homemade stuff is HEALTHY with all the vitamins, nutrients and protein to make you well again! 🙂
2 cups(ish) Homemade Chicken Stock
2 cups(ish) water
2 Tbsp Kikkoman Soy Sauce (the China Lily brand is loaded with sugar- don’t use this kind!)
2-3 tsp Seasalt to taste (salt is SO SO soothing on the throat- when you’re sick is not the time to worry about salt intake!)
1 tsp each onion powder and garlic powder
1/4 tsp fresh cracked black pepper or cayenne pepper. (loosens phlegm etc)
**Put all above in pot on high till everything is boiling, then add in some veggies here’s what I did:
1 cup grated carrots- use your kitchen aid for this peeps, it’s WAY to much work to stand there and do that when you’re sick. (set timer for 10 mins, turn heat to med low and walk away)
After 10 mins, add in:
1 cup chopped green onion
1 chopped up pepper- mine was orange this time
Simmer for 2 or 3 minutes, and you are ready to eat!
Tip: to go HG strict, cut out the carrots and use celery, or 2 peppers. Personally, although I am on the strict diet right now, I don’t worry about losing weight when I’m sick. These were the only veggies in my fridge.
Tip: about the Homemade Chicken Stock: I usually boil it down to about half so that it’s stronger and dosn’t take as much space in my freezer, it’s kinda gelatin- like once cooled, so that is why I use half water with this recipe. If you don’t boil it down, or use store bought stuff, you can probably skip the water 🙂
Tip: I would add some celery in there if you have some, and some white onion if you feel so inclined, I am just too tired to bother with all that.
