I absolutely love this dish! It was an exciting day when I realized I could still have HG Spaghetti and HG spaghetti sauce and it taste like normal!! 😀 Sugar Free, Low Carb, Hypoglycemia Diet friendly yumminess!! 😀
Say hello to Zucchini noodles!
3 chopped peppers and 1 onion, grilled or fried. Grilled is best in my opinion! (Bake at 425 for 20 mins) stir into sauce.
1 Tbsp butter
1 Lb ground beef
1 Tbsp salt
2 tsp onion powder
2 tsp garlic powder
1 Tbsp Italian Seasoning mix.
In large pot:
1 large can diced tomatoes (796 ml, 28oz)
1 small can diced green chillies (114ml, 3.85oz)
1 can drained mushrooms, or fresh chopped
2 cans tomato paste
1 cup water
2 cups chicken stock, homemade preferred
OK, so combine all that in a pot and simmer for 20 mins.
fresh Zucchini, made into noodles using a spirilizer or something similar. See here for more on Zucchini noodles.
Bring large pot of filtered boiling water to boil.
Put zucchini in boiling water. Set timer for 1 minute, strain and eat! 🙂 Easy hey?! 😀
Ok, now for serving!! This is important!!
Put sauce on bottom! See the picture? If you put the zucchini on the bottom you will have a puddle on your plate. It seriously makes a difference! But go ahead… if you’re anything like me you’ll have to try it to see! HAHA! 😀
Sprinkle grated cheese and/or parmesan cheese on top. SO YUMMY!! 😀 Enjoy!
