The best things are made when I’m in a crunch it seems! I’ve been totally sick the last couple days with a sore throat and fever, so jello is what this body wants! And I can’t have sugar because of my Hypoglycemia! bleh!
This is easier than making jello from a box people! and SOOO much better for you 🙂 Basically, make your fav protein shake (sweetened preferable), and stir in the melted gelatin. Easy peasy! 🙂
1/2 cup hot water
around 12 frozen strawberries or other favorite frozen berries (make sure you eat only the allotted daily amount of fruit in one sitting for the Hypoglycemia Diet! Make Strict by using just Strawberries)
1-2 tsp vanilla extract
1-2 tsp sweetener like Xylitol and/or Splenda
Blend till smooth (should be about 7 -8 cups liquid when done)
While blending, into metal bowl stir:
2 Packages (2 Tbsp) Gelatin
1/2 cup boiling water. Stir till dissolved.
Pour gelatin water into blender, add 1-2 Tbsp plain Whey protein concentrate (eliminate the sweetener and vanilla if using sweetened whey protein shake)
Blend for 1 minute.
Pour into metal bowl. Enjoy!
Mine was mostly set right away because the strawberries were so cold. But refrigerate for 1 hour if not set 🙂
