Sugar Free Custard (hypoglycemia diet strict, GF,SF,LowCarb)

OLYMPUS DIGITAL CAMERAThis is surprisingly easy and won’t believe how YUMMY it is!! And I FINALLY found a way to make it without cornstarch and it dosn’t make it slimy like all the other thickeners do!

Ingredients:

In separate large bowl whisk 2 eggs, set aside.

In small pot:

1 Cup Whipping Cream or other heavy cream

1/2 tsp Sea Salt

3 Tsp Xylitol

1 package Splenda

Whisk and heat above till boils.

Here’s where it’s a new little trick: SLOWLY drizzle the heated milk into the whisked eggs while using a mixer on low till it’s all in there. Pour it all back into pot and slowly bring to a boil again, stirring the whole time, use mixer in pot off an on till just boiling. Turn off stove.

Stir in 1 Tbsp butter and 1 Tbsp Vanilla and/or almond/ maple/ caramel/ other flavors. You usually want to START with Vanilla and then add more of the other flavors after.

Let cool while mixing about every 15 or 20 minutes or so. Once cool. mix very well and refrigerate till ready to use.

That’s it! The trick here is in the mixer- you need to NOT freak out when it gets a little lumpy and just keep mixing. Follow the directions and you should come out with a yummy creamy dessert 🙂

Tip: top with whipping cream and berries for a healthy easy dessert that LOOKS amazing! 😀
