Sugar Free Meatloaf (Hypoglycemia Diet Strict and Lib)

Sugar Free Meatloaf (HG lib, GF, SF, LC)Let me start off by saying that meatloaf was never my favorite! I always DRENCHED the Ketchup on it, and still never really loved it. Well my friends, THIS you are going to LOVE!!! 😀 I’ll share with you the secret ingredient: BACON!! hehe!

Stir into large bowl:

1 chopped onion(optional, cut out if on the Strict Hypoglycemia Diet)

1/2 package sugar free bacon, raw, chopped. (please read the ingredient list to know if there is sugar in there!)

1 tsp each: Salt, onion powder, garlic powder, chili powder

1/2 tsp cinnamon

1 tsp Xylitol

1 packet Splenda

1/2 can of 156ml/5.5oz tomato paste (Cut this out if you are Hypoglycemia Diet Strict)

Once above is stirred well, stir in 1 lb ground beef, spoon and pat down onto pie plate.

Bake uncovered at 400 for 50 minutes or so.

Tip: this meatloaf has ALOT of water on the bottom of pan when you are done, be careful when you take it out of the oven or you will have quite a mess!

Tip: about the bacon- there are 2 ways to find out if there’s sugar in your store-bought foods, and one way is very deceiving! You can look at the Nutritional box where it says Per Gram, and then tells you there is 0 sugar in the bacon. Or you can read the ingredients, where sugar is listed second and you KNOW there is sugar in it, just not enough to be more than .99 grams to make a full 1. Always read the INGREDIENTS label on your products for sugar.

Tip: You can also slice some Green pepper, sliced tomato and cheese on top if you like, for a nice little change, looks pretty too! 😀
