Sugar Free Peanut Butter recipe

So, Tim and I are both on the Hypoglycemia Diet, and it’s making a HUGE difference! Tim is Type 2 Diabetic and I have pretty severe Hypoglycemia. With this diet, Tim is taking less and less insulin and needing to check his numbers less and less because his numbers are normal, as long as he sticks to the diet! Which is actually pretty easy with me doing all the cooking and researching for new HG safe recipes, lucky guy šŸ˜‰ Peanut butter just does NOT taste the same without SOME salt or sweetener or BOTH! šŸ™‚

We have been buying sugar free peanut butter from the grocery store for a while now, and sometimes I have the ambition to stir in some salt or something. Today, I actually MEASURED what I put in the sugar-free, salt-free peanut butter from the grocery store.

Scoop out the peanut butter into a large bowl and stir in:

1 Tbsp Xylitol

1 Package Splenda

3 tsp Sea salt

Stir well, and scoop back into Peanut butter container. You are done! Enjoy! šŸ™‚

Tip: this amount of sweetener and salt makes it almost taste like a peanut butter cup šŸ™‚ so, use less if you want less sweet! We use it on celery as a snack, so sweet is nice! šŸ™‚
