Zucchini Bake (Hypogycemia Diet, GF, SF, Low Carb))

Zucchini Bake (HG, SF, GF, Low Carb)

Prep Time: 15 mins
Cook Time: 45 mins

Ingredients:
Zucchini
Tomatoes
Onion
Cheese
Salt

Directions:
Butter your casserole dish.
Layer sliced zucchini, sprinkle salt, then sliced tomatoes, sliced or chopped onion and grated cheese.
Layer the above until your casserole dish has 2 inches of space from top of dish.
Top with generous cheese and cover.
Put in oven at 375 degrees for 45 mins. Take cover off half way through cooking to brown cheese.
Let sit 5 mins and serve! YUM!

The more layers you use, the more liquid you will have, so if you make a big casserole like I do, you will need bowls! 🙂
